🧂 Ingredients (in order of use)
1 cup macaroni (cooked, reserve some pasta water)
1 tbsp butter
1 clove garlic, chopped
1 tbsp plain flour
200ml milk (add gradually)
Splash of pasta water (if needed)
½ packet spinach, washed
Handful cheddar cheese (no added salt)
Small handful parmesan (no added salt)
👨🍳 Method
① Cook macaroni as per packet instructions (save some pasta water)
② Melt butter in a pan and cook garlic until fragrant
③ Stir in flour and cook until smooth
④ Gradually add milk, whisking until creamy
⑤ Add pasta water if you want it looser
⑥ Stir in spinach until wilted
⑦ Add cheddar and parmesan, mix until melted
⑧ Combine with macaroni and serve
