🧂 Ingredients (in order of use)

  • 1 tbsp vegetable oil

  • 2 spring onions, chopped

  • 300g cooked duck meat, shredded

  • 150g frozen peas

  • 2 eggs, beaten

  • 2 cups cooked and cooled rice

  • 150g pineapple chunks (fresh or in juice)

  • 1 tbsp low-salt soy sauce

  • 1 tsp sesame oil

👨‍🍳 Method

① Heat oil in a wok or large pan on high heat

② Add spring onions and stir fry for 30 seconds

③ Add duck and peas, cook for 2 minutes

④ Push everything to the side, pour in eggs and scramble

⑤ Add rice and toss everything together

⑥ Add pineapple, soy sauce, and sesame oil

⑦ Stir fry for another 2 minutes and serve
